How to Make Cauliflower Pizza

Cauliflower is one of the most popular, versatile and nutritious substitutes for rice, dough and many other grains. As low-carb, high-protein and plant-based diets become increasingly popular, I’ve loved experimenting with cauliflower in my kitchen. Cauliflower is dense in nutrients and a great source of vitamin C, folate and fiber.

After seeing cauliflower pizza crusts sweep the internet over the past year or so, I was wondering how to make cauliflower pizza crust myself. I tried out this grain-free cauliflower crust pizza recipe that shows how to make cauliflower pizza crust in a few simple steps.

Ingredients:

The core ingredients for a basic cauliflower crust are simple — cauliflower, Parmesan cheese and eggs. Spices and herbs add more flavor, and toppings like roasted red peppers, pepperoni and mozzarella are some of my favorites.

  • 2 heads cauliflower
  • 3 eggs
  • 1/3 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon fresh parsley, minced
  • 1 teaspoon garlic powder
  • 1/2 cup Parmesan cheese, finely grated
  • 1/4 cup mozzarella cheese, finely grated

Method:

  1. Wash and cut your cauliflower. Discard the stems (or save them to use in homemade stock, like I do) and save the florets.
  2. Pulse the florets in a food processor to make what I call “caulipowder.” If you don’t have a food processor, the next best option is to grate the cauliflower with a cheese grater — although this will take quite some time.
  3. The most important step in making a good cauliflower pizza crust is to remove as much moisture as possible from the caulipowder. If the caulipowder is too watery, the crust won’t stay together. Microwave your caulipowder until it’s steaming (about four minutes), allow it to cool for a few minutes and then wring out excess liquid using cheese cloth or a fine tea towel. As an example, I used florets from two heads of cauliflower and extracted 1.25 cups of liquid.
  4. Next, mix your caulipowder, grated cheese, spices and eggs together to form dough.
  5. Shape the dough into circles and place on a prepared baking sheet. Your kitchen might be a bit messy, as the cauliflower crumbs tend to get everywhere.
  6. Bake the dough at 450°F for about 10 minutes, until the edges are browned but not burned. Let cool.
  7. Top with your favorite sauce and toppings, bake for another seven minutes or so, and enjoy!
